Three residues, and the job each one does in the complex

Glycine at the N-terminus provides the free amine that coordinates copper and, being the smallest residue, imposes no steric constraint. Histidine provides the imidazole ring, the strongest copper-binding site in the peptide. Lysine provides a positively charged side chain that stays free when copper is bound and governs solubility and charge. Together they form a compact copper-binding motif.

Glycine

The N-terminal amine is one of the three nitrogen donors to copper. Glycine has no side chain, so nothing competes with that coordination or crowds the metal. Its position at the N-terminus is what makes the amine available.

Replacing it with a bulkier residue would change the geometry of the site.

Histidine

The imidazole ring is a classic copper ligand and the anchor of the complex. Together with the glycine amine and the deprotonated backbone amide between them, it completes a stable chelate around copper(II). Histidine is also the residue most sensitive to pH in this role, because the imidazole protonates at lower pH and loses the metal.

It is the residue that makes GHK a copper-binding peptide rather than just a tripeptide.

Lysine

The lysine side chain does not coordinate copper in the complex; it remains protonated and positively charged at physiological pH. That charge keeps the complex soluble and gives the molecule its net positive character. It is also the residue that pairs with trifluoroacetate after synthesis.
