The blue colour of a GHK-Cu solution comes from the copper centre absorbing in the visible range, a property of the metal and its coordination environment. Because the colour depends on that environment, a change in shade or the appearance of a precipitate indicates that something about the complex has changed.

Where the colour comes from

Copper(II) complexes absorb visible light through transitions between d orbitals, and the energy of those transitions depends on the ligands arranged around the metal. That is why copper salts and copper complexes are coloured at all, and why different copper complexes are different colours.

Why a change in colour is information

If the coordination environment changes — the copper is displaced by a competing ligand, the peptide degrades, the pH moves far enough to protonate a coordinating nitrogen, or copper comes out as a hydroxide — the absorption changes with it. A paler solution, a shift in shade, a green cast or visible cloudiness are all signs that the species in the vial is no longer only what you put in.

What to record

Note the appearance at reconstitution and at each use: colour, clarity, any particulate. A record of normal appearance is what makes an abnormal appearance recognisable, and a solution whose history is undocumented cannot be judged by eye at all.

The limits of looking

Colour will not reveal partial degradation of the peptide while the copper remains coordinated, nor low-level impurities, nor loss of potency within a visually unchanged solution. For those questions the answer is HPLC and mass spectrometry, which is what the batch documentation covers.
